Pecan Apricot Tea Loaf

    When having tea there is nothing like a great cake to go with it, this tea loaf is packed with apricots and pecans.

    Serves: 12 

    • 1 egg, whisked
    • 3/4 cup (185g) sugar
    • 25g butter, melted
    • 225g flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • 170ml orange juice
    • 115g pecans, chopped
    • 175g dried apricots

    1. Preheat oven to 180 degrees C. Grease a loaf tin.
    2. Whisk the egg with the sugar until fluffy. Stir in butter. Mix the flour, baking powder, salt and bicarb soda then sieve onto the egg mixture.
    3. Add orange juice and mix with an electric mixer until smooth.
    4. Wash the apricots well then dice them. Stir the pecans into the dough.
    5. Put the dough into the prepared loaf tin and bake in the preheated oven for 1 hour until a toothpick placed in the centre comes out clean. If the cake is getting too dark in the last quarter of an hour lay a piece of aluminium foil loosely over it.

    This is a marvellous recipe! The amount of fruit gives it a very "meaty" texture and tastes great with or without butter. I substituted walnuts for pecans (as I had a glut!) and it was very well received. It did take 75 mins in my oven but it can be temperamental.
