Tomato Soup with Corn and Mince


    This is a great hearty soup that has a good serve of meat and vegetables. I like it as a family dinner on a cold evening served with warm bread.

    Serves: 4 

    • 2 tablespoons olive oil
    • 3 large onions, finely diced
    • 250g beef mince
    • 1 tablespoon flour
    • 2 cups (500ml) tomato juice
    • 2 cups (500ml) water
    • 1 pinch salt and freshly ground black pepper, to taste
    • 1 pinch sweet paprika, to taste
    • 1 pinch cayenne pepper, to taste
    • 1 tablespoon granulated stock
    • 1 (400g) tin corn kernels

    1. Heat olive oil in a saucepan and fry onions with the minced meat. Sprinkle with flour.
    2. Pour in the tomato juice with water. Season with salt, pepper, paprika, cayenne pepper and the stock.
    3. Add the corn and let boil vigorously for 5 minute. Serve.
