Potato and Cucumber Salad

    There is nothing like a good potato salad with your favourite barbecue meats and this is definitely a good one with fresh firm chucks of cucumber and a tart mustard dressing.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 2 tablespoons white wine vinegar
    • 1 teaspoon strong mustard
    • 1 pinch salt and freshly ground black pepper, to taste
    • 1 large onion, diced
    • 1 bunch chives, diced
    • 1kg potatoes, cooked in their skins, preferably day before
    • 1 cucumber, cut into thin slices

    1. Mix the vegetable oil, vinegar, mustard, salt and pepper well in a salad bowl.
    2. Add the onions and chives, potatoes and cucumbers. Mix well.
    3. Leave the potato salad for at least 3-5 hours to allow the flavours to combine. Just before serving season again if necessary.
