Roast Tenderloin

    Tenderloin is a beautiful cut of meat and I like it cooked in one piece then sliced to serve rather than cooked pre-cut.

    Serves: 6 

    • 1 (1 1/2kg) whole beef tenderloin, prepared by the butcher
    • 4 large garlic cloves or more, to taste, crushed
    • 4 tablespoons salt

    1. Preheat oven to 230 degrees C.
    2. Mix the garlic and salt in a small bowl with a spoon until a paste forms. Rub it over the meat on all sides.
    3. Place the beef in a roasting tray and roast in preheated oven for 35-45 minutes until the meat is brown and crisp on the outside and the inside is cooked to your liking.
    4. If you are unsure, simply cut the meat and if it is still too raw put it back in the oven for a few more minutes.
