Tenderloin is a beautiful cut of meat and I like it cooked in one piece then sliced to serve rather than cooked pre-cut.
1 (1 1/2kg) whole beef tenderloin, prepared by the butcher
4 large garlic cloves or more, to taste, crushed
4 tablespoons salt
- Preheat oven to 230 degrees C.
- Mix the garlic and salt in a small bowl with a spoon until a paste forms. Rub it over the meat on all sides.
- Place the beef in a roasting tray and roast in preheated oven for 35-45 minutes until the meat is brown and crisp on the outside and the inside is cooked to your liking.
- If you are unsure, simply cut the meat and if it is still too raw put it back in the oven for a few more minutes.
