I like to make my own herb butter so I can use the herbs I like best; once made I keep it in the fridge to serve with steaks, fresh bread and whatever else comes to mind.
250g soft butter
2 garlic cloves, crushed
1 bunch mixed herbs (e.g. rosemary, thyme, basil etc.), finely diced
1 pinch salt and pepper, to taste
- Combine the crushed garlic with some salt.
- Beat the softened butter with an electric mixer until fluffy.
- Mix herbs, garlic and the butter then season to taste with salt and pepper.
- Shape into a roll or fill a small bowl then chill.
