    I like to make my own herb butter so I can use the herbs I like best; once made I keep it in the fridge to serve with steaks, fresh bread and whatever else comes to mind.

    Serves: 10 

    • 250g soft butter
    • 2 garlic cloves, crushed
    • 1 bunch mixed herbs (e.g. rosemary, thyme, basil etc.), finely diced
    • 1 pinch salt and pepper, to taste

    1. Combine the crushed garlic with some salt.
    2. Beat the softened butter with an electric mixer until fluffy.
    3. Mix herbs, garlic and the butter then season to taste with salt and pepper.
    4. Shape into a roll or fill a small bowl then chill.
