Fresh Vanilla Custard

There is nothing like homemade custard and this as a great vanilla version that uses both fresh vanilla and essence.


Serves: 10 

  • 1 vanilla pod
  • 350ml milk
  • 25g cornflour
  • 1 egg yolk
  • 200g thickened cream
  • 30g sugar
  • 1 teaspoon vanilla essence
  • 1 pinch salt, to taste

  1. Beat 6 tablespoons milk, cornflour and egg yolks.
  2. Bring the remaining milk, cream, vanilla pulp, vanilla bean, vanilla essence, sugar and salt to the boil in a saucepan.
  3. Whisk in the cornflour mixture then bring to the boil again and remove from the heat. Allow to cool.
  4. Cut open the vanilla bean longways and scrape out the pulp.
