Simplicity can often create the best meals and this is a great example, it is basically chanterelle mushrooms sautéed with bacon.
500g fresh chanterelle, cleaned
50g lean bacon
1 small onion, finely diced
1 pinch salt and freshly ground white pepper
1 sprigs parsley, diced
- Season with salt and pepper then sprinkle with parsley and serve immediately.
- Melt butter in a frying pan and sauté the bacon and onion until translucent.
- Cut large chanterelle down the middle. Simmer for 10 minutes in an open frying pan until the liquid has completely boiled off.
