This is a wonderfully refreshing bread salad using pita bread, feta cheese, spinach, celery, cucumber, watercress and mint. Also great with Lebanese bread.


Serves: 4 

  • 2 pita breads, diced (or use Lebanese bread)
  • 60ml extra virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1 pinch coarse sea salt, to taste
  • 500g fresh spinach or other salad leaves
  • 3 sticks celery, diced
  • 1 cucumber, peeled, seeds removed and diced small
  • 1 bunch mint, cut into thin strips
  • 1 handful watercress
  • 175g feta, crumbled
  • 1 pinch ground black pepper, to taste

  1. Preheat oven to 180 degrees C.
  2. Spread pita bread pieces in a single layer on a baking tray and bake for about 20 minutes until they are crispy. Remove from the oven.
  3. In a small bowl mix the olive oil and vinegar then season with salt.
  4. Wash and clean the spinach and place in a salad bowl. Add the celery, cucumber and pita pieces then pour the dressing over and mix well.
  5. Just before serving add the mint and watercress. Mix again. Sprinkle with the feta, season with pepper then serve.
