Braised Beef

    This is a beautiful braised beef where the meat has marinated for three days. It is served with a cream thickened sauce made from the boiling liquid.

    Serves: 4 

    • 750g beef
    • Marinade
    • 2 cups (500ml) vinegar
    • 2 cups (500ml) white wine
    • 1 cups (500ml) water
    • 1 teaspoon salt
    • 2 onions, diced
    • 5 peppercorns
    • 4 cloves, diced
    • 4 allspice berries
    • 1 bay leaf
    • 1 carrot, diced
    • 1 stick celery, diced
    • 1 parsley root, diced
    • Frying
    • 60ml oil
    • Sauce
    • 1/2 cup (125ml) cream
    • 1 tablespoon flour
    • 1 pinch salt and pepper, to taste

    1. Marinade: Place all the ingredients for the marinade in a big saucepan and bring to the boil. Remove from the heat and cool.
    2. Put the meat in a stoneware pot or a large porcelain dish (don't use a metal dish) and drizzle the cooled marinade over it. Leave the meat to infuse for 3 days in a cool place, turning once or twice.
    3. Frying: Heat oil in a camp oven or heavy pot and brown all sides of the meat (taken out of the marinade) in it.
    4. Pour the filtered marinade over the meat and braise in the oven covered for about 1 1/2 hours basting regularly. Add more marinade or hot water if needed.
    5. Sauce: Beat flour with cream then add to the pot liquid until thickened. Season with salt and pepper.
