These barbecued spring onions are a Mexican dish called 'Cebollitas'. They often serve them there as an accompaniment to meat dishes or just as a snack.


Serves: 4 

  • 1 bunch spring onions
  • 3 tablespoons olive oil
  • 1 pinch salt and pepper, to taste
  • 1-2 lemons, juiced, to taste

  1. Wash and cut off the upper third of the green part of the spring onions. Place in a bowl then drizzle with olive oil and season with salt and pepper. Marinate for at least half an hour.
  2. Place the marinated spring onions on the barbecue and cook until they start to go soft and the ends start turning black; all the time turning and drizzling with lemon juice.
  3. If you like it really lemony you can drizzle them with lemon juice again at the end.
