Triple Lemon Cake

    This is a great afternoon tea with a triple hit of lemons; a lemon cake, a lemon soak and a lemon glaze.

    Serves: 10 

    • 400g butter and a bit extra to grease the tin
    • 1 2/3 cups (400g) sugar
    • 2 teaspoons vanilla sugar
    • 8 eggs
    • 3 1/4 cups (400g) flour
    • 1 tablespoon baking powder
    • 1 lemon, zested and juiced
    • For Soaking
    • 2 lemons, juiced
    • 1 tablespoon icing sugar
    • Decoration
    • a lemon glaze

    1. Preheat the oven to 180 degrees C. Line a baking tray with butter or baking paper.
    2. In a bowl beat the butter, sugar, vanilla sugar and eggs until fluffy.
    3. In another bowl mix the flour and baking powder.
    4. Combine into the dry ingredients into the wet ingredients along with the lemon juice and lemon zest; mix well. Spread the mixture over the baking tray.
    5. Bake in the preheated oven for 35-45 minutes.
    6. Prepare the soak by mixing the lemon juice with the icing sugar and water.
    7. When the cake is removed and still hot apply the soak with a brush.
    8. Let the cake cool then brush with lemon glaze. Then cut into desired sized pieces.

    This cake had a lovely taste and texture. I added the zest & juice of 2 lemons as I was rushing and made a mistake, which meant the cakes took a bit longer to bake. I had enough mixture to fill 2 3lbs loaf tins and a few mini muffins!!  -  30 May 2011  (Review from Allrecipes UK & Ireland)

    I made this cake yesterday (with the help of my 3 year old daughter!) and it turned out beautifully. The only change to the recipe was that I used 7 large eggs instead of 8 medium sized. I used a large baking tray 35x26cm and it was more than enough for the 20 people at last night's street party planning meeting. In fact I may have to make it again for the actual Jubilee party!
