In a medium bowl, stir together the cornflour and sugar. Add the butter and cream well. Add eggs, one at a time, mixing well after each addition. Combine the flour and baking powder; stir into the sugar mixture until a dough forms. On a lightly floured surface, roll the dough out to 1/2 cm thickness and cut into desired shapes with biscuit cutters. Place biscuits 2 1/2 cm apart onto a dry baking tray.
Bake for 8 to 10 minutes in preheated oven, until biscuits are golden brown at the edges. Allow biscuits to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.
I really liked this biscuit. It tastes just like those my mum makes. It's not too sweet, but very dense, which makes it great with a cup of coffee. My kids liked using the cutters with these biscuits, although it did take longer with them helping! - 29 Sep 2008
