Cupcake: Preheat the oven to 180 degrees C. Line a cupcake tray with patty cups.
Separate the eggs. Whisk the egg yolks with water and sugar until foamy. Mix flour, cornflour and baking powder then mix into the egg yolk mixture. Whisk the egg whites until stiff then fold them in too.
Pour the batter into the prepared cupcake tray and smooth out. Bake for 15-20 minutes in the preheated oven. Leave to cool and then cut a lid out of the top.
Filling: Mix the jelly with sugar and boiling water. Leave until half-set.
Icing: Make a glaze out of the icing sugar, green colouring, water and melted copha then cover the tops of the muffins with it.
Whisk the cream and fold it in to the half-set jelly. Leave to set a little bit again then pour into a piping bag. Squirt the mixture onto the bottom half of the muffins. Place the cupcake tops back on.
Use lollies to make frog faces on the tops of the cakes while the icing is still wet.
