Potato, Bacon and Egg Bake

This is a great potato bake that can be a light meal or the side dish to a stew or casserole. The boiled egg is an unusual twist but works really well.


Serves: 4 

  • 1 1/2 kg potatoes
  • 3 eggs
  • 150g smoked bacon
  • 150g sour cream
  • 1 pinch salt and pepper, to taste
  • 30g butter, for greasing

  1. Cook the potatoes and hard boil the eggs then leave to cool.
  2. Preheat the oven to 220 degrees C and grease an ovenproof dish.
  3. Cut potatoes and eggs into slices.
  4. In the oven proof dish place layers of potato, egg and bacon lightly seasoned with salt and pepper.
  5. Mix the sour cream with some water and pour over the potatoes.
  6. Bake in preheated oven for about an hour.
