Fruit Topped Almond Cake

    A lovely almond flavoured cake base is topped with fresh sweetened whipped cream and fresh fruit of your choice.

    Serves: 10 

    • Base
    • 5 eggs
    • 1 pinch salt
    • 125g marzipan paste
    • 75g sugar
    • 1 teaspoon vanilla essence
    • 75g flour
    • 40g cornflour
    • 1 teaspoon baking powder
    • Topping
    • 400g cream
    • 1 teaspoon vanilla essence
    • 2 tablespoons icing sugar
    • 1kg berries or fruit (strawberries, raspberries, blueberries, kiwi fruit, apricots, grapes, etc.), diced

    1. Base: Separate 4 eggs. Whisk 4 egg whites with salt until stiff then leave to cool in the refrigerator.
    2. Preheat the oven to 180 degrees C. Line baking tray with baking paper or grease well.
    3. Crumble the marzipan into in a large mixing bowl. Whisk the whole egg, egg yolks, sugar, vanilla and marzipan paste until fluffy.
    4. Mix the flour, cornflour and baking powder gradually. Last fold in the whisked egg whites and mix well.
    5. Spread the mixture on the prepared baking tray and bake in preheated oven for about 25 minutes.
    6. Let it cool and cut into pieces.
    7. Topping: Whisk the cream with vanilla and icing sugar until stiff. Cover the individual pieces of the base with the cream and cover with fruit of your choice.
