No-Cook Pizza Sauce

Tomato purée, olive oil, garlic and dried spices sit for hours to let the flavours blend in this uncooked pizza sauce. The thickness of the sauce depends on the amount of water used; it should be thick enough to spread and hold on the base.

Ingredients
Serves: 8 

  • 185g tomato paste
  • 1 1/2 cups (375ml) water
  • 5 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • salt and freshly ground black pepper to taste
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon dried rosemary, crushed

Directions
Preparation:5min  ›  Extra time:2hours resting  ›  Ready in:2hours5min 

  1. Mix together the tomato purée, water and olive oil. Mix well. Add garlic, salt and pepper to taste, oregano, basil and rosemary. Mix well and let stand for several hours to let the flavours blend. No cooking necessary, just spread on pizza base.

Tip:

Make a large batch of this pizza sauce ahead of time, and freeze in small portions - just enough for 1 or 2 pizzas. Then you'll have homemade pizza sauce on hand whenever you need it!

Altered ingredient amounts. This is a very good sauce. I have tried quite a few and this is my husband’s favourite. I cut the water amount in half because of other recommendations, I highly recommend this or the sauce will be very thin and watery. I also add a ½ teaspoon of sugar. Altered ingredient amounts. Thanks for the recipe......to make it a quick sauce, cut the water down to 225ml and the oil down to 4T......simmer for 15 minutes and add flour to bind the oil, water and tomato and spices.....a fast pizza sauce that's ready while your dough is rising! - 21 Jul 2008
