This is a great corn salad that also features capsicum and diced salami. It travels well so makes a great packed lunch.

Ingredients
Serves: 4
- 1 red capsicum, seeds removed and diced
- 1 green capsicums, seeds removed and diced
- 2 (400g) tins corn kernels, drained
- 2 tomatoes, diced
- 225g salami or smoked sausage, diced
- 1 tablespoon finely diced onion
- 1 dash, oil
- 1 dash, vinegar
- 1 pinch salt and freshly ground pepper, to taste

- Combine the capsicum, drained corn kernels, tomatoes, sausage and onion.
- Make a simple dressing out of the oil, vinegar, pepper and salt then pour it over the salad.
