Coconut Honey Waffles

    Although waffles are normally thought of as a breakfast these coconut ones make a great dessert when served with ice cream.

    Ingredients
    Serves: 8 

    • 4 eggs
    • 100g softened butter
    • 100g honey
    • 1 teaspoon vanilla essence
    • 1 teaspoon lemon juice
    • 100g desiccated coconut
    • 2 cups (250g) plain flour
    • 5 teaspoons baking powder
    • 1 pinch salt, to taste
    • 1/2 cup (125ml) milk

    1. Separate the eggs and then beat the egg yolks with the butter and honey until fluffy. Add the vanilla and lemon juice.
    2. Mix the flour and baking powder then stir into the butter.
    3. Whisk the egg whites with salt until stiff and mix this mixture along with the milk and coconut to form a smooth dough.
    4. Heat the waffle iron and cook the waffles for 2-3 minutes.
