A basic cake recipe is taken to a new level of presentation and taste when the top is studded with fresh cherries.


Serves: 12 

  • 125g butter
  • 200g caster sugar
  • 1 teaspoon vanilla essence
  • 4 eggs
  • 3/4 cup (90g) plain flour
  • 2 1/2 teaspoons baking powder
  • 100g breadcrumbs
  • 500g cherries, stones removed
  • 20g icing sugar, for decoration

  1. Beat together the butter, sugar, vanilla and eggs until light and creamy.
  2. Preheat the oven to 180 degrees C. Grease a springform tin.
  3. Bake in the preheated oven for about an hour. Dust the finished cake with icing sugar.
  4. Mix in the flour, baking powder and breadcrumbs.
  5. Add the mixture to the prepared tin. Spread the cherries (stones removed) over the top press them down slightly.
