Christmas Rum Eggnog

    This is a recipe for eggnog which is something that I had always heard of but never had until I found this recipe. You can also use freshly grated nutmeg for dusting along with the cinnamon.

    Serves: 4 

    • 4 egg yolks
    • 4 tablespoons sugar
    • 1 cup (250ml) rum
    • 1 pinch cinnamon, for dusting

    1. Beat egg yolks with sugar until fluffy.
    2. Heat rum in a small saucepan but do not boil otherwise it will curdle the eggs.
    3. Pour the rum into the egg mixture in a thin stream stirring continuously.
    4. Pour into glasses or mug and sprinkle with cinnamon.
