Chocolate Lover's Chocolate Chip Cake

    The use of grated dark chocolate and chunks of milk chocolate in this cake make for a chocolate lover's dream.

    Serves: 12 

    • 150g butter
    • 150g sugar
    • 3 eggs
    • 3 tablespoons milk
    • 3 tablespoons rum
    • 2 cups (250g) flour
    • 2 tablespoons baking powder
    • 100g dark chocolate, grated
    • 100g milk chocolate, diced
    • 1 teaspoon vanilla essence

    1. Preheat oven to 180 degrees C. Grease a loaf tin.
    2. Beat the butter in a bowl with an electric mixer until fluffy.
    3. Gradually stir in the eggs, sugar and vanilla until there is a foamy mixture. Stir in the milk and rum.
    4. Mix flour and baking powder then gradually stir into the batter. Fold in the grated dark chocolate and the diced milk chocolate.
    5. Bake the chocolate cake in the preheated oven for about 60 minutes.
