Moroccan Fish Marinade


    This Moroccan fish marinade known as 'Chermoula' is fabulous with barbecued or fried fish. If you can not find preserved lemons it can be made with finely diced lemon zest.

    Serves: 6 

    • 2 cloves garlic
    • 1/2 teaspoon coarse salt
    • 2 tablespoons extra virgin olive oil
    • 1/2 teaspoon ground cumin
    • 1 teaspoon sweet paprika
    • 1 pinch cayenne pepper
    • 3 tablespoons fresh coriander, finely diced
    • 1 tablespoon parsley, finely diced
    • 1 lemon, juiced
    • 1/2 preserved lemon, finely diced

    1. Crush garlic with salt in a mortar to a pulp.
    2. Mix the olive oil with the spices and then add the herbs and lemon.
    3. Mix together well.
