Sautéed Broccoli

This makes a simple side vegetable a meal favourite. The broccoli is sautéed with garlic before being finished in a chicken stock.


Serves: 2 

  • 300g fresh broccoli
  • 1 clove garlic, finely diced
  • 1 1/2 tablespoons olive oil
  • 120ml chicken stock

Preparation:5min  ›  Cook:12min  ›  Ready in:17min 

  1. Wash the broccoli and cut into bite-sized pieces.
  2. Heat olive oil in a large frypan and sauté the garlic over a gentle heat for 2-3 minutes.
  3. Add the broccoli and stir it in the frypan for 2 minutes so that it is covered with olive oil.
  4. Add the chicken stock and cover. Increase the temperature to a medium heat and cook for approximately 8 minutes until the broccoli is soft.

This is one of my go-to broccoli recipes since it's quick AND healthy. I sometimes add a squirt of lemon juice to brighten it up and usually use veggie stock or just water for the liquid. One of my husband's favorites! - 20 May 2013
