Warm Vegetable Salad

    This warm vegetable salad comes for Sicily where it is known as 'Bobbia' In Italy it is traditionally served lukewarm but also tastes great when served cold.

    Serves: 4 

    • 500g tomatoes
    • 500g red and green capsicums, cut into pieces
    • 500g onions, roughly diced
    • 500g potatoes, washed and diced
    • 1 pinch salt and freshly ground black pepper, to taste
    • 1/2 cup (125ml) extra virgin olive oil

    1. Cut the tomatoes into wedges and cut out the stem. Put the tomatoes in boiling water then rinse with cold water and peel them.
    2. Add all vegetables to a saucepan and season with salt and pepper. Pour the oil over them and put the lid on the saucepan.
    3. Cook the vegetables over a low heat for 45 minutes, stirring occasionally.
