Basic Hazelnut Cake

This is a great variation on a basic cake recipe. This version uses ground hazelnuts but you can use almonds or another favourite flavour.


Serves: 12 

  • 30g breadcrumbs
  • 80g soft butter or margarine
  • 200g sugar
  • 4 large eggs
  • 350g flour
  • 2 teaspoons baking powder
  • 50g ground hazelnuts
  • 1 pinch of salt, to taste
  • 100g sultanas, optional

  1. Preheat oven to 180 degrees C. Grease a silicone cake mould well (even the inner rim) and sprinkle with breadcrumbs.
  2. Beat butter or margarine and sugar with a whisk or mixer until fluffy. Beat in eggs one at a time.
  3. Mix in the flour, baking powder, ground nuts and salt. Fold in the sultanas (if using). Spread the cake mixture evenly in the mould.
  4. Bake the cake in the preheated oven for 45-50 minutes. When a skewer inserted in the centre of the cake comes out clean, the cake is ready.
  5. Allow the cake to cool slightly and then allow it to cool completely on a wire rack. Dust with icing sugar to serve, if desired.
