Mix plain flour, baking powder and bicarb soda and then mix in the egg, butter, buttermilk, sugar and salt to a smooth batter.
Heat the butter in a large non-stick frying pan over medium high heat. Ladle in approximately 60ml of batter for 4 small pancakes. Reduce heat to medium and fry for a couple of minutes until you notice bubbles on the surface and the edges are cooked. Flip pancakes over to cook on the other side for another couple of minutes.
