These are the American style buttermilk pancakes that are much thicker than those I am used to; traditionally they are served with maple syrup but you can eat them however you want.

Serves: 4

  • 1 1/4 cups (155g) plain flour
  • 1 teaspoon baking powder
  • 1 pinch bicarb soda
  • 1 egg
  • 3 tablespoons melted butter
  • 200ml buttermilk
  • 3 tablespoons sugar
  • 1 pinch salt, to taste
  • 3 tablespoons butter, for frying

Preparation:10min  ›  Cook:20min  ›  Ready in:30min

  1. Mix plain flour, baking powder and bicarb soda and then mix in the egg, butter, buttermilk, sugar and salt to a smooth batter.
  2. Heat the butter in a large non-stick frying pan over medium high heat. Ladle in approximately 60ml of batter for 4 small pancakes. Reduce heat to medium and fry for a couple of minutes until you notice bubbles on the surface and the edges are cooked. Flip pancakes over to cook on the other side for another couple of minutes.
  3. Serve with maple syrup and whipped butter.

I really enjoy these being a bit's tempting to want to thin down the mixture, but all I can say is don't Works well with wholemeal flour as well. - 22 Apr 2011
