Nanna's Rice Pudding

    A hearty, comforting baked dessert for cold winter nights, made just like my Nanna used to make it for me! Its cheap, easy to make, and my kids love it just as much as I do!

    Serves: 4 

    • 1/2 cup medium grain rice
    • 2 1/2 cups milk
    • 1/4 cup sugar
    • 1 teaspoon vanilla essence
    • 1-2 teaspoons butter
    • 1-2 tablespoons sultanas (optional)
    • Few Shakes ground Nutmeg

    Preparation:5min  ›  Cook:2hours  ›  Ready in:2hours5min 

    1. Preheat oven to 160 degrees. Rinse rice under cold water.
    2. In 1L casserole dish, mix together milk, vanilla and sugar, add rice (and sultanas if desired) and stir. Dot butter over top of pudding and sprinkle with Ground Nutmeg
    3. Bake in oven for about 2 hours. This pudding is great both hot and cold!

    Nice flavours but mine was vey dry and mainly rice not creamy after 1.5 hours at 165c. Was looking for more custard type recipe to remind me of my grandma.  -  15 Jan 2014
