Garlic and Ginger Chicken Breasts

    A quick marinade of garlic, ginger and lime juice. You can barbecue, grill or fry these.

    Serves: 4 

    • 4 skinless, boneless chicken breast fillets
    • 3 cloves crushed garlic
    • 3 tablespoons ground ginger
    • 1 tablespoon olive oil
    • 4 limes, juiced

    Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Pound the chicken to 1cm thickness. In a large bowl combine the garlic, ginger, oil and lime juice. Add the chicken, stir till well-coated then marinate in the fridge for 20 minutes.
    2. Remove chicken from the fridge and barbecue, grill or fry, basting with marinade until cooked through and juices run clear. Dispose of any remaining marinade.

    For simplicity alone this recipe gets four stars. I liked the fact that I already had all the ingredients in my kitchen, too. I will use this recipe again when I'm in a hurry. This is a nice lowfat meal. I served it with fresh green beans and noodles. Thanks Susan!  -  18 Jul 2008
