Dark and Stormy

    Ginger beer and rum with lime wedges and fresh ginger. Use more lime if you want. So much better than rum and coke!

    Serves: 2 

    • 3 nips rum
    • 1 stubbie of ginger beer (I always use Bundaberg)
    • 1 lime, cut into quarters
    • slices of fresh ginger, so that each drink gets about a teaspoon worth
    • ice
    • lime slices or mint to garnish

    1. Half fill 2 medium-large glasses with ice. Squeeze a lime quarter into each glass and throw in the skin. Add the fresh ginger to each glass and mix them around a bit in the ice.
    2. Add a nip and a half of rum to each glass and stir around again.
    3. Add ginger beer to fill the glass, stir a little, then add the remaining lime quarter to each glass. Garnish with lime slices and/or mint leaves. Cheers!
