Eggless Apple Banana Muffins

Just a recipe I have adapted from another recipe I tried. No eggs and they still turn out!

Makes: 12 

  • 280g plain flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 125g caster sugar
  • 60g butter
  • 1 overripe banana
  • 1/2 cup apple sauce
  • 1 cup (250ml) milk
  • 1 teaspoon mixed spice
  • 1/4 cup chopped walnuts

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Preheat oven to 180 degrees C.
  2. Sift the dry ingredients into a bowl.
  3. In a separate bowl, beat the butter and sugar to a cream.
  4. In another small bowl, mash together the banana and the apple sauce.
  5. Add the flour mix and the milk alternately to the butter/sugar.
  6. Add the banana/apple sauce mix and walnuts.
  7. Bake for 20 minutes or until done.


Try not to overwork the batter, 'cause you want your muffins to come out nice and fluffy!

Serving suggestion

Sometimes I sprinkle some cinnamon sugar over the top which is yummy also!

Tasty but not life changing. 280gm flour is close enough to 2 cups, and 125 gm of sugar is close enough to 1 cup - to make life easier. I also melted the butter instead of creaming it because was short on time. They turned out. No time or temp given - mine were almost 30m in 180C fan forced for a small sized muffin. - 08 Nov 2011
