Just a recipe I have adapted from another recipe I tried. No eggs and they still turn out!
Try not to overwork the batter, 'cause you want your muffins to come out nice and fluffy!
Sometimes I sprinkle some cinnamon sugar over the top which is yummy also!

Tasty but not life changing. 280gm flour is close enough to 2 cups, and 125 gm of sugar is close enough to 1 cup - to make life easier. I also melted the butter instead of creaming it because was short on time. They turned out. No time or temp given - mine were almost 30m in 180C fan forced for a small sized muffin. - 08 Nov 2011
