Gluten-Free and Dairy-free Chocolate Cake

    This gluten-free dairy-free chocolate cake uses a nice mix of flours and baking powder to get a light texture. Coeliacs need never be without chocolate cake again.

    Serves: 6 

    • 1/2 cup buckwheat flour
    • 1/2 cup soy flour
    • 1/2 cup rice flour
    • 1/2 cup cornflour
    • 2 teaspoons baking powder
    • 2 tablespoons cocoa powder
    • 1 cup brown sugar
    • 3 teaspoons vanilla essence
    • 4 eggs
    • 1/2 cup soy milk

    1. Preheat oven to 180 degrees C. Sieve all flours together into mixing bowl with 2 heaped teaspoons of baking powder.
    2. Add 2 heaped tablespoons of cocoa powder, 3 teaspoons vanilla essence, 1 cup of brown sugar, 4 eggs (lightly beaten) 1/2 cup of soy milk (or milk of choice) mix thoroughly with spatula.
    3. Scrape into greased cake tin, bake in moderate oven for 20-30 mins - check by inserting skewer into centre. Let cool in cake pin then decant onto cake cooling rack.
