This is a delightful cake that uses oranges and zucchinis to create a sweet yet healthy treat ideal for morning or afternoon tea.


Serves: 8 

  • 4 eggs
  • 1 1/2 cups (310g) caster sugar
  • 175ml oil
  • 150ml orange juice
  • 150g zucchini, grated
  • 4 cups (500g) plain flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons bicarbonate of soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons cinnamon
  • 2 teaspoons orange zest
  • 1/2 cup nuts, chopped, optional
  • Glaze
  • 3/4 cup (125g) icing sugar
  • 2-3 teaspoons orange juice

  1. Preheat oven to 180 degrees C.
  2. Grease and flour bottoms only of two 20x10cm or 23x12cm loaf tins.
  3. In a large bowl whisk eggs until thickened and lemon coloured. Gradually beat in sugar.
  4. Stir in oil, orange juice and zucchini. Stir in remaining ingredients. Mix well.
  5. Pour into loaf tins. Bake 45-55 minutes until a skewer inserted in the centre comes out clean. Cool 10 minutes in tins. Remove from tin and cool slightly.
  6. To make the glaze: Combine icing sugar and orange juice to spreading consistency. Spread over warm loaves.
  7. Cool completely. Wrap and refrigerate.
