This is a simple to make carrot cake that includes cinnamon and allspice giving it a taste that reminds me of my nan.


Serves: 8 

  • 1 cup (220g) sugar
  • 1 cup (120g) self-raising flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup (125ml) oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 2 eggs
  • 110g grated carrot

  1. In a large bowl sift flour, salt and baking powder then stir in the sugar.
  2. Add oil and stir well; this will be a stiff mix.
  3. Add eggs one at a time and mix well.
  4. Add carrots and mix.
  5. Place in baking tin, such as a loaf tin.
  6. Bake in preheated oven at 180 degrees C for 50-60 minutes.
