    This is a simple fruit cake that uses currents and sultanas that have been soaked in tea along with mixed spice to create an afternoon tea delight.

    Serves: 8 

    • 50g currants
    • 100g sultanas
    • 1 mug strong tea
    • 75g brown sugar
    • 2 eggs, whisked
    • 1/4 teaspoon mixed spice
    • 2 3/4 (340g) self raising flour, sieved

    1. Soak the currants and sultanas overnight in the tea along with the sugar.
    2. Line a buttered loaf tin with baking paper and preheat the oven to 150 degrees C.
    3. In a large bowl whisk the eggs. Add the fruit mixture and stir. Add the flour along with the mixed spice.
    4. Turn into the prepared tin and bake in the preheated oven for 1 1/2 to 2 hours or until a skewer inserted in the centre comes out clean.
    5. Cool in the tin and then turn out to cool completely.
