Vegetarian Microwaved Rice

    This is an easy vegetarian dish that has a range of spices as well as vegetables that all combined in a single dish which can be served as a side or a light meal.

    Ingredients
    Serves: 4 

    • 2 tablespoons oil
    • 1 bay leaf
    • 2 cardamom pods, coarsely crushed
    • 3 whole cloves
    • 4 black peppercorns
    • 2 1/2 cm cinnamon stick
    • 1 onion, roughly diced
    • 400g fresh or frozen mixed vegetables, diced
    • 200g basmati rice
    • 500ml water
    • 1 pinch salt, to taste

    1. Heat the oil in a large frying pan or saucepan over medium high heat. Add the spices and onion then saute until the onion is golden brown.
    2. Add the diced vegetables then reduce heat to medium and stir occasionally.
    3. Meanwhile, wash the rice until water runs clean. Place the rice and water in a 4 litre microwave safe dish then cover with plastic wrap. Use a knife to make a small hole in the plastic wrap for steam to escape.
    4. Microwave for 6 to 8 minutes on High until the water boils and then another 5 minutes on Medium/Low.
    5. Test the vegetables and add salt to taste. Add the vegetables to the rice mixture then cover and microwave for a further 5 minutes on High then Medium/Low for 12 minutes.
    6. Let stand 5 minutes before serving.

    Great recipe and loved that it was so easy to make with ingredients I already had in my cupboard. I used a mix of chopped cauliflower, red pepper, courgette & extra onion.
