Heat the oil in a large frying pan or saucepan over medium high heat. Add the spices and onion then saute until the onion is golden brown.
Add the diced vegetables then reduce heat to medium and stir occasionally.
Meanwhile, wash the rice until water runs clean. Place the rice and water in a 4 litre microwave safe dish then cover with plastic wrap. Use a knife to make a small hole in the plastic wrap for steam to escape.
Microwave for 6 to 8 minutes on High until the water boils and then another 5 minutes on Medium/Low.
Test the vegetables and add salt to taste. Add the vegetables to the rice mixture then cover and microwave for a further 5 minutes on High then Medium/Low for 12 minutes.
