    You will never guess from how delicious this vanilla cheesecake is how quick it is to make. Most cheesecakes need to chill overnight but not this one.

    Serves: 3 

    • 150g digestive biscuits, crushed
    • 80g butter, melted
    • 120g caster sugar, divided
    • 1 tablespoon vanilla essence
    • 1/2 cup (125ml) single cream
    • 200g cream cheese, softened

    Preparation:20min  ›  Extra time:30min chilling  ›  Ready in:50min 

    1. Mix the biscuit crumbs and melted butter with 2 tablespoons of the caster sugar. Press into the bottom of a round cake tin and put in the fridge while you prepare the rest.
    2. Add the vanilla to the cream and beat until the soft peak stage.
    3. Beat the cream cheese and remaining sugar together. Fold in cream mixture and mix thoroughly.
    4. Spread into tin on top of biscuit base. Refrigerate at least 30 minutes before serving.
