Chocolate and Hazelnut Muffins

    A delicious chocolate and hazelnut muffin that is covered in a chocolate butter icing. Perfect for a special chocolately Valentine's Day treat.

    Ingredients
    Serves: 14 

    • 100g 70% chocolate
    • 6 tablespoons milk
    • 175g unsalted butter
    • 3/4 cup (185g) caster sugar
    • 4 larges eggs
    • 1 1/4 (155g) self-raising flour
    • 1/2 teaspoon baking powder
    • 100g crushed hazelnuts
    • Icing
    • 120g 70% chocolate
    • 150g unsalted butter
    • 1 cup (155g) icing sugar
    • 1/2 vanilla pod

    Directions
    Preparation:20min  ›  Cook:15min  ›  Extra time:50min  ›  Ready in:1hour25min 

    1. Muffins: Preheat oven to 180 degrees C.
    2. Melt chocolate and milk over a saucepan of boiling water.
    3. Beat butter and sugar until pale and creamy then stir in eggs. Fold in flour, baking powder and hazelnuts .
    4. Add the melted chocolate and milk mixture then mix well.
    5. Spoon into muffin cases and put into oven for 15-20 minutes.
    6. Icing: Melt chocolate over water and allow to cool to room temperature. I often place saucepan in a bowl of cool water and keep stirring until cool.
    7. Beat butter until smooth and creamy then add sugar until fluffy and light.
    8. Add vanilla seeds from pod and mix in chocolate. Whisk on low speed until mixed then on high speed until icing is smooth and glossy.
    9. When muffins are completely cooled add icing and decorate.

    I am very impressed with the rise that I got from this recipe. Sometimes my cupcakes can be very flat, but these had a fantastic top to them!
