Savoury Tomato Crumble

    Crumbles are not just for desserts! This tomato crumble makes a great lunch or light dinner and is easy and quick to prepare.

    Serves: 4 

    • 60g margarine
    • 230g breadcrumbs
    • 230g tomatoes, peeled and diced
    • 1 small onion, diced
    • 60g grated cheese
    • 1 pinch salt and pepper, to taste
    • 1 egg
    • 2 tablespoons milk

    Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

    1. Melt the margarine and stir in breadcrumbs. Place one third of this mixture in a greased ovenproof dish.
    2. Add tomatoes, onion and cheese in layers. Sprinkle with salt and pepper.
    3. Whisk together the egg and milk then pour over the top. Cover with the rest of the breadcrumbs.
    4. Bake at 200 degrees C for 20-30 minutes or until crumbs are golden brown.

    This recipe was simple and tasted fantastic, however, I did make a few small changes. I used a red onion and I mixed some dried basil into the crumb mix.
