Vegetable and Lentil Soup

    This is a really healthy soup full of nutritional vegetables and lentils with no fat. Great for kids and health conscious adults.

    Ingredients
    Serves: 4 

    • 1 tablespoon fresh ginger, grated
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon chilli powder
    • 1/2 teaspoon curry powder
    • 1/2 teaspoon ground coriander
    • 2 onions, finely diced
    • 1 parsnip, diced
    • 1 stick celery, diced
    • 4 large carrots, diced
    • 750ml vegetable stock
    • 1/2 cup (90g) split red lentils
    • 2 teaspoons long grain brown rice

    Directions
    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. In a warm saucepan warm through ginger, cumin, chilli powder, curry powder and coriander.
    2. Add the onion, parsnip, celery, carrots and stock then cook for 10 minutes before adding the lentils and rice.
    3. Cook for 30 minutes keeping an eye on the saucepan as the lentils soak up the water quite quickly and you don't want it to boil dry.
    4. Blend the soup using a hand held blender or a potato masher.
    5. Taste and season as required.
