    This is a great tandoori chicken that is made from scratch including the tandoori paste. Started in the oven it can be finished under the grill or on the BBQ.

    Ingredients
    Serves: 4 

    • Tandoori Paste
    • 1 tablespoon ground coriander
    • 1 tablespoon ground cumin
    • 1 tablespoon chilli powder
    • 1 tablespoon grated garlic
    • 1 tablespoon grated fresh ginger
    • 2 tablespoon tamarind paste
    • 1 teaspoon turmeric
    • 30ml oil
    • To cook
    • 2 tablespoons tandoori paste
    • 1 cup (250g) natural yoghurt
    • 1 lemon, juiced
    • 2 green chillies, diced
    • 1 pinch salt, to taste
    • 500g skinless, boneless chicken, breasts or thighs
    • 30g butter

    Directions

    1. Make the tandoori paste by combining all the ingredient and mixing together.
    2. In a small bowl mix together 2 tablespoons of tandoori paste, yoghurt, lemon juice, green chillies and salt.
    3. Combine the chicken with the tandoori marinade thoroughly in a ceramic bowl. Cover and leave to marinate overnight in the fridge.
    4. Preheat the oven to 180 degrees C.
    5. Remove the chicken from the marinade. Place chicken on a roasting tray then brush with melted butter and cover with foil.
    6. Bake for 40 minutes in the preheated oven. Baste frequently with the juices.
    7. After 40 minutes uncover the chicken and grill or BBQ for 15 minutes; turning once. Chicken is ready once browned on both sides.
