Pasta with a Bacon and Tomato Sauce

This is a quick and economical pasta dish that has a bacon and tomato sauce mixed with tagliatelle then sprinkled with cheese.


Serves: 4 

  • 90g butter
  • 230g bacon, diced
  • 1 garlic clove, crushed
  • 1 (65g) tin tomato paste
  • 230ml chicken stock
  • 1 pinch salt and pepper, to taste
  • 450g tagliatelle or fettuccine
  • 90-130g cheese, grated

  1. Melt 1/3 of the butter in a saucepan. Add the bacon and garlic and fry until the bacon is crisp.
  2. Stir in the tomato paste, stock, salt and pepper. Bring to the boil then simmer for 15 minutes.
  3. Meanwhile cook the tagliatelle in a large saucepan of boiling salted water for 12 minutes. Drain then toss in the remaining butter until it has melted.
  4. Pour the sauce over the tagliatelle and garnish with the grated cheese.
