Capsicums Stuffed with Mushrooms

Capsicums are stuffed with a variety of mushrooms including button, oyster and shiitake then finished off in the oven with a layer of mozzarella cheese.

Ingredients
Serves: 4
- 1 tablespoon cooking oil
- 1 large onion, finely diced
- 200g button mushrooms, finely diced
- 75g oyster mushrooms, finely diced
- 75g shiitake mushrooms, finely diced
- 2 small chillies, finely diced
- 1 pinch salt and pepper, to taste
- 4 capsicums any colour, halved and seeded
- 130g mozzarella cheese, thinly sliced
- 1 dash olive oil with basil

- Preheat oven 180 degrees C.
- Heat oil in a frypan then add the onions, mushrooms and chillies. Cook until soft then add salt and pepper to taste and stuff the halved capsicums with the mixture.
- Place sliced mozzarella on top of the capsicums. Place on a lightly oiled baking tray.
- Drizzle olive oil over stuffed capsicums and place in the oven. Cook until cheese is golden.
