    This ia a lovely spicy tart made with paneer cheese and various roasted vegetables such as capsicum and zucchini.

    Ingredients
    Serves: 4 

    • 110g paneer
    • 2 teaspoons chilli paste
    • 1 red onion, diced
    • 1 red capsicum, diced
    • 1 green chilli, finely sliced
    • 1 zucchini, diced
    • 3 tomatoes, diced
    • 1 teaspoon whole cumin seeds
    • 1 teaspoon coriander, diced
    • 1 clove garlic, diced
    • 1 dash olive oil
    • 3 eggs
    • 100ml thickened cream
    • 1 teaspoon garam masala
    • 3 basil leaves
    • 1 pinch chilli powder, to taste
    • 1 pinch salt and pepper, to taste
    • 1 20cm shortcrust pastry shell

    Directions

    1. Marinate paneer in chilli paste overnight.
    2. Toss onion, capsicum, chilli, zucchini, tomatoes, cumin and coriander in olive oil and roast in oven until soft and golden.
    3. Whisk eggs into cream then add garam masala, basil, chilli and season to taste.
    4. Preheat oven to 190 degrees C.
    5. Layer the cheese and vegetables in the pastry case then pour over egg mixture and bake for 30-40 minutes or until set and brown.
