Baked Potatoes with Sour Cream and Bacon

    These baked potatoes can be served as a side or a lunch. We like to snack on them in front of the TV on a lazy Sunday watching the football.

    Serves: 2 

    • 2 large baking potatoes
    • 1 teaspoon olive oil
    • 60g butter
    • 2 rashers rindless bacon
    • 4 chives
    • 140ml sour cream

    1. Prick the potatoes all over with a fork and brush with the olive oil.
    2. Place in the centre of a preheated oven at 200 degrees C for 1 to 1 1/4 hours or until tender.
    3. Using kitchen scissors cut the chives onto paper towel. Set aside.
    4. Grill the bacon rashers then cut into small pieces with kitchen scissors.
    5. Cut a cross in the top of each baked potato. Spoon over the sour cream onto each potato and top with bacon bits. Garnish with the chives. Serve with salad.
