Prick the potatoes all over with a fork and brush with the olive oil.
Place in the centre of a preheated oven at 200 degrees C for 1 to 1 1/4 hours or until tender.
Using kitchen scissors cut the chives onto paper towel. Set aside.
Grill the bacon rashers then cut into small pieces with kitchen scissors.
Cut a cross in the top of each baked potato. Spoon over the sour cream onto each potato and top with bacon bits. Garnish with the chives. Serve with salad.
