This dish always reminds me of my dad who cooked this on the rare occasions he needed to do dinner. The pork and vegetables are combined then slowly cooked in the oven. Serve with mashed potatoes.
I cooked pork leg steaks for 1 hour only at 180 deg instead and so didn't need so much stock - only a couple of tbsp of water as the mushrooms and pork produced enough juice as they were cooking.
