    This dish always reminds me of my dad who cooked this on the rare occasions he needed to do dinner. The pork and vegetables are combined then slowly cooked in the oven. Serve with mashed potatoes.

    Serves: 2 

    • 2 large pork chops
    • 1 pinch black pepper, to taste
    • 1 green capsicum, diced
    • 5 mushrooms, sliced
    • 1 onion, diced
    • 500ml pork stock
    • 2 teaspoons cornflour

    1. Preheat oven to 150 degrees C.
    2. Heat a little oil in a frying pan and add the chops. Fry with a little black pepper until browned. Transfer to an ovenproof dish.
    3. Fry vegetables until softened then pour over the pork.
    4. Add the pork stock to the dish and place in the oven for 2 hours.
    5. Approx 30 minutes before serving add the cornflour and stir well to thicken the sauce.
