Skirlie is a traditional Scottish dish. It can be eaten on its own as a meat substitute, used as a stuffing or served as a side with a meat dish.
60g butter or dripping
1 onion, diced
100g coarse oats
1 pinch salt and pepper, to taste
- Melt the butter or dripping in a frying pan.
- Add the onion and cook until slightly browned and soft.
- Add the oatmeal a bit at a time, stirring until all the fat is absorbed.
- Season then serve.
