    These are simple chocolate chip biscuits that I love to make at home. I love to eat them dipped into milk with the kids.

    Ingredients
    Serves: 1 

    • 2 cups (250g) plain flour
    • 1/2 teaspoon salt
    • 1 teaspoon baking powder
    • 3/4 cup (125g) light brown sugar
    • 1/2 cup (125g) caster sugar
    • 125g unsalted butter, softened
    • 1 egg
    • 1 teaspoon vanilla essence
    • 185g chocolate chips

    Directions

    1. Preheat oven to 180 degrees C.
    2. In a large bowl sift together the flour, salt and baking powder.
    3. In another large bowl beat together both sugars and butter until it is light a fluffy then mix in the egg and vanilla.
    4. Gradually add in the flour mixture into the sugar and butter mixture then add in the chocolate chips; reserve some of the chips.
    5. On a baking tray drop in tablespoonful portions the biscuit dough about 5cm apart. Sprinkle a few chocolate chips over the top of each cookie drop.
    6. Bake for 8 to 10 minutes or just until light golden brown.
    7. Let sit for at least 1 minute before removing from the baking tray. Remove and cool on cake racks.

    Used different ingredients. I swapped the 2tbs of flour for dark coco powder to make chocolatey and split the 6oz chocolate chips into 3oz white chocolate chips and 3oz dark chocolate smashed into small pieces...the dark chocolate melted a little whereas the white chocolate chips didn't which gave a nice contrast....all in all very yummy!!  -  22 Jun 2009  (Review from Allrecipes UK & Ireland)
