Scottish tablet is a sweet served in Scotland after meals. It is slightly similar to toffee but with a dairy component, this version also has vanilla.
1 kg golden caster sugar
250ml full cream milk
1 (400g) tin condensed milk
2 drops vanilla essence, to taste

Place sugar and milk into large saucepan. Place over a gentle heat and stir occasionally until all the sugar is dissolved.
Once all sugar is dissolved add butter and allow to melt. Once butter is melted add condensed milk, mix in well. Increase the heat and stir continuously while mixture boils until it has reached 240 C, using a sugar thermometer.
Allow mixture to settle then add a few drops of vanilla.
Beat mixture using a hand held beater until it is almost setting in saucepan. Pour mixture into a well greased baking tray and allow to set.
After 30 or so minutes score into pieces, this makes it easier to finally cut when it is set.
