Spicy Cheese Sauce

This is a traditional cheese sauce with a little hit of chilli. It also uses parmesan and cheddar. Serve with ham or corned beef, with cauliflower or potatoes, or spice up your macaroni and cheese with it.

Ingredients
Serves: 4
- 30g butter or margarine
- 30g plain flour
- 60ml milk, approximately
- 1 pinch mild chilli powder
- 1 pinch salt and pepper, to taste
- 60g cheddar, grated, approximation
- 30g parmesan, grated, to taste
- 2 tablespoons thickened cream

- Melt the butter on a low heat so as not to burn. Mix in the plain flour until you have a thick paste. I find this mixes easier when it is off the heat.
- On a low heat, so it doesn't heat too fast, gradually add the milk stirring all the time so as not to cause lumps. Continue adding until the liquid is semi thick.
- Add the chilli, pepper and enough salt to personal taste.
- When the mix is to the required thickness add in the grated cheddar stirring all the time.
- When the mixture is thick enough to slowly run off the spoon add the grated parmesan to taste and the cream stirring all the time.
- Heat until just before bubbling and serve.
